Potato-Based Resistant Starch

A new potato-based resistant starch meant for increasing fiber and reducing carbohydrate levels in food products has been introduced by MGP Ingredients, Inc. (MGPI). Under terms of an agreement with Penford Corporation, the ingredient will be produced by Penford using a patented process exclusively licensed to MGPI. The new starch, MGPI FiberStar™ 80 ST, delivers a minimum of 80% total dietary fiber, and its water-holding capacity is lower than fiber sources like wheat bran. In addition, MGPI FiberStar 80 ST has a clean flavor, is white in color and imparts a smooth, creamy texture.
